We are dessert people. We are. And oh they are sooo good. Now we do have some rules for dessert – only a little bit. And these days that’s becoming really hard to do because we are having these delicious raw desserts from and inspired by Julia Corbett’s Raw Cookie Book. And they taste so good and have superfoods too. Actually to me they don’t even count as dessert since they have foods like chia seeds, maca powder and coconut flakes…so I kind of have more than “a little bit”.
Cacao Reishi Cookie Bites
- 1 1/2 cup walnuts
- 1 1/2 cups coconut flakes
- 3 T coconut butter (optional)
- 5 medjool dates, pitted
- 4-5 T raw honey
- 2 T lucuma powder
- 2 T maca powder
- 1 – 2 tsp reishi extract powder
- 1/4 cup cacao powder
- 1/4 tsp Himalayan salt
- a pinch of cinnamon and nutmeg
Place coconut and walnuts into a food processor and mix until a fine texture is formed. Add all remaining ingredient and mix until combined and sticky. Roll into 1 inch balls and set to chill before serving, if desired.
When we made our Cacao Reishi Cookie Bites I didn’t have a few of the ingredients and since I had macadamia butter but no walnuts I replaced that as well. Ours had macadamia butter, coconut flakes, goji berries, raw honey, lucuma powder, maca powder, cacao powder, kosher salt, cinnamon and nutmeg. As you can see from my little one’s eyes…they were hard to resist. And they were tasty! I dropped them onto the plate and chilled them before we each had one for dessert.
All of Julia’s desserts are raw – no baking! And if you have a food processor than you can easily make any of her desserts. Happy eating!
