We make these pancakes almost every weekend. If I have fresh berries from the farmer’s market, I’ll dice them and put about a cup in the batter. The kids really enjoy making these too and there’s usually at least one of them helping with the mixing.
1 cup whole wheat flour
2 tablespoon common granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
2 tablespoons oil
additional oil for frying
Mix the first four ingredients in a bowl and set aside. Then beat the next three ingredients in a separate bowl. Pour the dry ingredients into the wet ingredients and mix gently until combined (you can add the berries at this point too). Don’t mix too much….just until it’s all combined. It’s ok if it’s a little lumpy. Then heat up your flat griddle on medium heat. Once heated, lower it to low and pour 1/8 – 1/4 cup at a time to make the pancakes. When the pancakes are bubbly, turn them over until both sides are cooked. Serve with butter and warm maple syrup. Enjoy!
